I am a highly experienced home cook, and work with both British and American cookbooks in my own kitchen on a regular basis. I am lucky enough to have the best supermarket in the world on my doorstep (Berkeley Bowl in Berkeley, California), which makes it easy to find the ingredients I need to test your recipes. I also work with my local fishmongers and butchers to find the best substitutions for ingredients that are harder to find in the US.
